Description: The Kioutsoukis family planted 11 hectares of vines the Greek grape varieties, in northern Greece near Thessaloniki, an area well known from ancient times for its wines. Dimitrios UC Davis winemaking and now his daughter Stavroula agronomist carry on the family tradition of organic and biodynamic methods in viticulture with zero suphites. Keramos is a blend of Limnio and Xinomavro. Whole clusters are used of the two varieties and are co-fermented in amphora with a skin maceration of 30 day fermentations. The grapes are then pressed and aged in the amphora for a further nine months on the fine lees, before bottling with zero additions. The wine has aromas of dried plum and fig with a dusting of herbs. In the mouth there are sensations of maraschino cherry, black and red berries, pleasing acidity with very supple tannins. The wine has lovely vibrancy and delicious drinkability. Vegan Friendly
