Description: This Le Clos d'Anne et Jean-François Ganevat cuvée is made from Savagnin grapes grown on a terroir of grey marl and limestone scree, and vinified in an airtight cellar (i.e., wetted) for 3 years.
It has been vinified for 3 years on lees according to the simplest rules, with no fining or filtration, and no addition of SO2.
The slight deposit is of course natural.
Jean-François Ganevat is a masterful winemaker who produces an impressive array of cuvées yearly, utilising estate-grown fruit and sourced grapes to craft between thirty-five and forty unique wines annually. His winemaking approach transcends the norm, with a meticulous focus on individualised élévage for each cuvée, a process that may seem daunting to some. Drawing inspiration from Burgundian techniques, Jean-François employs ouillage to carefully maintain his barrels.
