All the grapes were de-stemmed and fermented together, minimal handling in the way of punch downs and pump overs. Pressed just before Christmas 2023 and transferred mostly to stainless steel, but with a 25% proportion being aged in a used barrique from Barolo.  The two elements were blended together after 6 months and bottled just before Christmas 2024. Minor addition of sulphur before bottling.
